I may sound like a bit of a snob, but I'd say that fine dining in Japan is like nothing you can get anywhere else. The cuisine focuses on allowing the flavors themselves to sing, rather than adding a lot of artificial tastes that can only serve to ruin them.
Mind you, I'm still a bit too young to have tried anything not made in my homeland, but I always planned to travel once I graduated.
